柑酵素





星期一晚上做了这瓶柑的酵素。

我用了

15 粒柑
10 粒青柠檬
大概 650 Gram 的冰糖

不会啊!我每次用这个瓶子做都是放 9 ~ 10 粒柠檬的。有可能是我的水果还蛮多的。

以往我用大瓶也用很多柠檬,可是很苦。现在用少柠檬也会很苦。

你的瓶是不是5litre容量?我认为把柑对半切比较好,果汁比较容易流出。这只是我的看法。

不会咧,就算我以前做那个小瓶的我都用3粒柠檬,但是不会苦。

是不是你没有把柠檬皮去干净,它那层白色的皮会苦。

呵呵~~~ 我本来是放12粒而已,放第一层的时候就觉得很少,所以就每层5粒咯,但是放到最后一层的时候,差点连冰糖都放不进了!但是我硬硬挤进去咯!

讲求健康嘛!其实是我的冰糖只剩下这么多了,懒惰去买嘛!呵呵~~~

对,我是第一次做柑酵素。应该是不会很难喝啦!呵呵~~~

应该是有5L吧,我也不是很清楚!

对,其实应该要这样做才会有比较多的酵素,但是我在放第二层的时候才发现,但是已经迟了,所以只好在第4天开盖的时候,用筷子或勺去戳那些柑咯!

There's too many post at aunty irene's enzyme post, so ask you here.
I want to try make enzyme also, if i use a 1 litre bottle to do a trial run. How much lemon and fruits like orange do you suggest to use? Can I use yellow skin lemon cos quite difficult to find the green colour one recently?
How long to harvest the enzyme?

thank you for visited my blog.

for 1 little bottle, i think you may have

1 pc lemon
3 pcs orange (big)
about 300grams brownish sugar.

whole process is 14 days.

you can use lemon one, sometimes when i cant find the green one so i will use yellow one.

I 1st time do also like tat, so i transfer to another container, then i used a Scissor to cut, use chopstick a bit difficult. but i think u cannot transfer cos too big & too much le

hahaha, we have the same pattern, like to "ji" everything in...everytime i do always pressed down.....then put in somemore until cannot put....heehee...

yalo, i dont have another big bottle liao! and some more transfer here transfer there is troublesome.

ha ha ... kai su ma! because mandarin oren is easy to press down ma!

I got peel the white part too and sometime lazy to peel i even cut away the skin till got the lemn fresh only. So i think this won't hv any white skin to make it bitter liau. But end up still 很苦。Dunno wat's wrong! Now drink this enzyme like drink beer ler.....hahaha

If need to add more fruits or more lemon etc, I can only do it after the 3rd days correct?

If I didn't add it during the 3rd day, now already the 5th day can I still add it?

har? like that ya, i really dont know le, but so far i have done so many just the 1st one will have a bit bitter but after that dont have liao.

after 过滤 have you put inside 冰箱 the taste will more better.

actually is cannot, because scare you will spoil the enzyme after open so many time.

this time dont add la, next time must remember, ok!

Dunno ler....first few times still taste gd then after that taste bitter liau. I put it in the fridge after harvest too. Think maybe i put too little sugar lor.

我今天也做了好大一瓶的甜菜根酵素,用了25粒橙,两粒黄梨,3粒奇异果,两粒甜菜根,三根胡箩卜,9粒柠檬和800g冰糖.我想每天抱那么大又重的瓶子摇也好辛苦.3天后还会加葡萄,因为今天懒得剥皮.我都把水果切很小块,可能是因为这样,每瓶都超active的.

过滤后,记得要放进冰箱内,它的味道真的是棒咯!刚开始可能你会有点不习惯,但是喝多1,2次你就会爱上它的。

Maybe next time you can try to do a bit more fruits or sugar and less the lemon.

哇~~~ 你的瓶子好大耶!可以放那么多的水果,但是就像你说的,每天要抱那么大的瓶子来摇,应该是很吃力吧! 没关系啦,就当作手部运动咯!呵呵~~~

水果最好不要乱参,除非你很了解它们的效果,不然等下不知会不会有反效果。所以还是做单一的酵素就好了!

哈哈~~~ 所以我才会买这么大的瓶子。不过因为只有我自己喝,所以我可以不用做那么多瓶,不然我没有地方放。

如果你家人全部都有喝的话,你可以去买2个来作做咯!这样就不会缺货咯!呵呵~~~

Do I have to shake the (enyzme)bottle everyday Or just leave it until 2 weeks. I started on 19/10, on the 3rd day i already stir but until now I did not shake it or do anything, please advice.

you need to shake it everyday. if not the lemon or fruits on top will 发酶.

那样你的酵素才能充分的发酵啊!

Lucky got a big bottle at home, so use it to make orange enzyme last friday nite.
Is it ok if I don't stir the content in the bottle after 3-4 days? How will it look like if the enzyme is not successful?

为什么要你在3/4天后,打开和搅拌呢?就是要看你的酵素成不成功。

3/4天,打开搅拌后,试喝看看酵素的味道够甜吗?有酒味吗?会苦吗?

只有没有黑色的泡沫,又有酒味的话就是成功咯。 不够甜或会苦的话,可以加水果或者冰糖,但是我们觉得还是加水果比较好,如果加太多的糖,就是破坏酵素本来的效应。

这样你会明白吗?

I'm not home till this friday, that why I ask what will happen if i dun stir it at 3-4days.

Was thinking that maybe anyone have tried not stirring it during the 1st week.

oh ic, how long you are away from your house? nobody can help you stir the enzyme?

if like that, maybe you can stir it after you came back, but do not add anymore thing already. scare cant process properly.

my enzyme have a layer of white mold but not smelly and taste very good on the 4th day what should i do. keep till the 14th day or throw away. pls advise

hi Elin,

i think you can take out and white layer, taste the enzyme if have 酒味,没有其他的味道,那样应该是没问题的。

但是如果你觉得不放心的话,也可以丢掉,因为我没有遇到过这样的情况。所以也不知道应该要怎样 advise 你。

Nobody is there to stir or shake the bottle for me. I think its alright if leave it there untouch, will go back and give it a shake instead.

如果是这样的话,那也没有办法咯!不过很怕你上面那层的柠檬或者水果会发酶!

如果你回来的时候,在开盖来看看咯,如果没有发酶,那就继续让它发酵吧!

我在1星期后才打开搅拌,水果没发霉还闻到些酒香。终于在等到收成。味道甜甜的,可能是放了太多糖而太少橙的关系。无论如何,谢谢你。
